تأثیر آنزیم بری، پیش خشک کردن و شرایط سرخ کردن بر روی خصوصیات کیفی خلال سیب زمینی سرخ شده

چکیده

تأثیر آنزیم بری، پیش خشک کردن و شرایط سرخ کردن بر روی خصوصیات کیفی خلال سیب زمینی سرخ شده مورد مطالعه قرار گرفت. برای این منظور خلال­هایی با ابعاد 8/0 × 8/0 × 8 سانتی متر تهیه و پس از اعمال هر پیش تیمار­ به صورت غوطه­وری در روغن داغ سرخ شدند. پیش تیمار­ها شامل: 1) خلال های شاهد (سیب زمینی خام)، 2) خلال­های آنزیم بری شده در آب داغ با دمای 70 به مدت 10 دقیقه، 3) خلال های پیش خشک شده با جریان هوای گرم با سرعت  1 و دمای 70 تا رسیدن به محتوای رطوبت 75% بر اساس وزن مرطوب و 4) خلال­های آنزیم بری و پیش خشک شده بود و سرخ کردن در قالب سه تیمار: 1) 160 به مدت 5 دقیقه، 2) 175 به مدت 4 دقیقه و 3) 190 به مدت 3 دقیقه صورت گرفت. نتایج بررسی­ها نشان داد که کمترین محتوای روغن در کلیه تیمار­های سرخ کردن مربوط به خلال­های آنزیم بری و پیش خشک شده بود. خلال­های آنزیم بری شده همچنین دارای کمترین محتوای قند احیاء و بنابراین کمترین محتوای آکریل آمید بودند. تیمار­های آنزیم بری و پیش خشک کردن بطور معنی­دار (01/0P<) سبب بهبود بعد­های رنگ سنجی شدند و خلال­های آنزیم بری و پیش خشک شده در کلیه تیمار­های سرخ کردن خصوصیات بافتی مطلوب­تری را نشان دادند. افزایش دمای سرخ کردن به طور معنی­دار (01/0P<) سبب افزایش جذب روغن و تشدید تولید آکریل آمید در محصول نهایی گردید.
