تاثیر فیبرهای نشاسته مقاوم بر ویژگی‌های کیفی و حسی کیک‌های اسفنجی

چکیده

در این تحقیق، تاثیر جایگزینی بخشی از آرد با فیبرهای نشاسته مقاوم بر ویژگی­های کیفی کیک­های اسفنجی به منظور تولید کیکی فراسودمند با میزان کالری­زایی کمتر و حداقل افت کیفی مورد بررسی قرار گرفت. لذا تاثیر فیبرهای نشاسته مقاوم نوع سوم یا رتروگرید در سطوح 5، 10، 15، 20، 25 و 30 درصد (بر اساس وزن آرد) بر ویژگی­های مختلف کیک شامل میزان رطوبت، ارتفاع، رنگ پوسته، رنگ مغز کیک و بافت مورد آزمون قرار گرفت. نتایج آزمون­ها نشان داد که کیک­های محتوی نشاسته مقاوم در مقایسه با شاهد از رطوبت بیشتری برخوردار بودند اما تغییرات قابل توجهی در رنگ و ارتفاع این کیک­ها مشاهده نشد. بررسی آنالیز پروفیل بافتی نیز بطور آشکاری مشخص کرد که افزایش سطوح فیبر، سبب تغییر معنی­دار برخی پارامترهای بافتی دستگاهی گردید. علاوه­براین، بر اساس نتایج بدست آمده از آزمون حسی و با وجود همه تفاوت­ها با نمونه شاهد، امتیازهای بالای بدست آمده در مورد بیشتر کیک­ها نشان داد که نمونه­های محتوی نشاسته مقاوم می­توانند رضایت مصرف­کنندگان را جلب نمایند. همچنین پس از محاسبه میزان انرژی نمونه­های شاهد و فیبری مشخص گردید که کیک­های محتوی نشاسته مقاوم از میزان انرژی­زایی کمتری برخوردار بودند.
