نانوکمپلکس های صمغ عربی- کازئینات حامل بتا کاروتن (2): بررسی اندازه ذرات، پتانسیل زتا ، مورفولوژی و کارایی انکپسولاسیون

چکیده

در این تحقیق، ویژگی­های نانوکمپلکس­های بر پایۀ صمغ عربی-کازئینات سدیم (تولید شده به روش همتافتی[1]) و کارایی انکپسولاسیون بتا کاروتن توسط این سیستم ها مورد بررسی قرار گرفت. برای این منظور، ابتدا محلول­های کازئینات سدیم (در دو غلظت 1/0 و 5/0% وزنی-حجمی) و صمغ عربی (در سه غلظت0، 1/0، 5/0 و 1 % وزنی-حجمی) تهیه شدند و سپس بتاکاروتن در محلول­های کازئینات سدیم بارگذاری شده و محلول­های صمغ عربی به آنها اضافه گردیدند و با تنظیمpH ، کمپلکس­های محلول تولید شد. نتایج نشان داد که اندازه ذرات و پتانسل زتا تحت تاثیر نسبت دو بیوپلیمر و pH قرار دارند. کمترین اندازۀ ذرات (95 نانومتر) در غلظت 1/0 % کازئینات و 5/0% صمغ عربی و در pH  5/4 به دست آمد در حالی که حداکثر پتانسیل زتا (22- میلی ولت)، در نمونه 1/0% کازئینات-1/0% صمغ عربی و در pH 5 مشاهده گردید. مطابق تصاویر به دست آمده از میکروسکوپی الکترونی پویشی(SEM)، نانوکمپلکس های 1/0 % کازئینات - 5/0% صمغ عربی در 8/4pH، دارای اندازه ذرات در حدود 100– 200 نانومتر بودند و همچنین در تصاویر به دست آمده از میکروسکوپی الکترونی عبوری (TEM)، نانوذراتی با هسته مشخص و دیواره دو لایه مشاهده شد. نتایج کارایی انکپسولاسیون نشان داد که افزایش غلظت کازئینات و صمغ عربی به ترتیب موجب افزایش و کاهش راندمان گردید.
