تاثیر لوریل آرژنین اتیل استر مونو هیدرو کلراید بر خواص فیزیکی و ضد­باکتریایی فیلم زیست کامپوزیت زئین حاوی نرم کننده اولئیک اسید

چکیده

لوریل آرژنین اتیل استر مونو هیدرو کلراید (LAE) یک نگهدارنده نسبتا جدید در صنعت غذا جهت کنترل رشد میکروارگانیسم­های بیماری­زا است. هدف از این تحقیق ارزیابی فیلم زئین حاوی 5 و 10 درصد LAE در حضور اسید اولئیک به­عنوان نرم کننده بود. نتایج این تحقیق نشان داد که با  افزودن 5 و 10 درصد LAE نفوذپذیری در برابر بخار آب فیلم زئین تولیدی در رطوبت نسبی90 درصد در مقایسه با نمونه شاهد به ترتیب 34 و 48 درصد کاهش یافت. با افزایش غلظت LAE مدول الاستیک، انعطاف پذیری و مقاومت کششی تضعیف گردید. هم­چنین درصد حلالیت فیلم زئین در حضور  LAEافزایش معنی داری مشاهده نشد (05/0p <). در نهایت خواص ضد­باکتریایی فیلم زئین حاوی 10 درصد LAE در دمای 37 درجه سانتی­گراد ارزیابی شد. نتایج نشان داد که اندیس کاهش لگاریتمی فیلم زئین حاوی اسید اولیئک علیه باکتری لیستریا مونوسایتوژنز و اشرشیا کلای  به ترتیب برابر 21/0 و 11/0CFU/ml بود. اندیس کاهش لگاریتمی فیلم فعال زئین حاوی اسید اولیئک و 10 درصد LAE در مقایسه با فیلم فعال زئین شاهد به­ترتیب 95 و 97 درصد کم­تر بود. این نتایج نشان داد که فیلم زیست فعال زئین در حضور اسید اولئیک تولیدی جهت استفاده به­عنوان بسته بندی فعال با هدف بهبود امنیت و افزایش طول دوره نگهداری محصولات غذایی پیشنهاد نمی­گردد.
